Fresh Tomato sauce

Fresh Tomato Sauce.

Ingredients:

2 tbsp olive oil.
2 tins chopped tomatoes (choose chopped tomatos without additives).
2 cloves of garlic.
1 onion.
1 bunch fresh basil.
Freshly ground black pepper.
2 teaspoons balsamico vinegar.

Method:

Peel en chop the onion very fine.
Heat a heavy based pan over medium high fire and add the olive oil.
Sweat the onions untill they start to get translucent.
Peel the garlic and squeeze it in with the onions. Fry the garlic with the onions untill all is soft, but not colored.
Add the chopped tomatos and bring to the boil. Season to taste with salt and pepper.
Simmer the sauce untill it's reduced by half.
Stirr in the chopped basil leaves and the balsamico vinegar.
Taste the sauce and add any salt, pepper or sugar if needed.

The sauce keeps up to 4 days in the fridge and freezes very well.
Don't put your mouth into motion, before your brain is in gear.
