Soup, who doesn't like it. Here are some delicious soups which are simple to make.

Roasted Garlic Soup.

Roasted Garlic Soup.

Ingredients:


3 large or 4 small heads of garlic.
30 gr unsalted butter.
3 large onions, finely diced.
3 bay leafs.
1 pinch of ground cloves.
4 tbsp. plain flower.
375 ml double cream.
1 liter water.
2 chicken stock cubes.
Freshly ground black pepper and salt to taste.

Method:

Preheat the oven to 160 degrees C.
Put the heads of garlic in a small roasting tin and drizzle with a little olive oil.
Roast the garlic 40 minutes in the oven.
Remove from the oven and let the garlic cool.
Peel the garlic when cool enough to handle and chop the cloves roughly.
Heat the butter over a medium heat and sweat down the chopped onions with the bay leafs and the ground cloves until soft and translucent.
Do not brown the onions as they will get bitter.
Add the chopped garlic cloves.
Add the flower and fry for another minute to cook out the flower, stirring continuously to avoid burning.
Add the water and the cream and bring to a boil.
Add the chicken stock cubes, turn the heat down and simmer the soup for 30 minutes with the lid open.
Remove the bay leafs and puree the soup in a blender.
Put the soup through a sieve in a clean pan.
Add pepper and salt to taste.

This soup keeps just one day in the fridge.

TIP

Chop up some cooked chicken meat and add to the soup just before serving, just long enough to warm trough.
Don't put your mouth into motion, before your brain is in gear.
