Soup, who doesn't like it. Here are some delicious soups which are simple to make.

Onion soup.

Ingredients for 4 persons:


1 piece rib of beef (300 gr).
2 pieces of marrowbone.
190 ml concentrated beef stock.
1 bayleaf.
½ bunch of parsley.
1 large carrot.
2 small onions.
4 large onions.
1 tsp black peppercorns.
25 gr butter.
Salt and ground black pepper to taste.
1½ liter cold water.

Method:

Peel the carrot and cut in thin disks.
Wash the 2 small onions, remove the top and roots and cut in fourths, leave the skin.
Put the water in a large pan, add the rib of beef, the marrowbones, the carrots, de small onions, the parsley, the black peppercorns and the bayleaf.
Bring to the boil and let it simmer for at least 5 hours.
Remove the rib of beef from the pan and keep for later.
Remove the marrowbones from the pan and strain the stock in a clean pan.
Bring the stock back to the bloil and add the concentrated beef stock, season to taste with salt and freshly ground black pepper.
Remove the fat from the rib of beef, pull apart the meat and add back to the stock.
Peel the 4 large onions, cut them in half and slice them thinly lenghtwise.
Heat the butter in a large frying pan on a medium heat until foaming and gently fry the sliced onions until they are soft, but not colored, this will take about 15 minutes.
When the onion are getting a light golden color, they are ready to add to the stock.
Bring the soup back to the boil and check for seasoning.
Serve the soup with slices of toasted baguettes, rubbed with garlic and toasted cheese on top.
Don't put your mouth into motion, before your brain is in gear.
