Soup, who doesn't like it. Here are some delicious soups which are simple to make.

Fresh tomato soup with pesto.

Ingredients for 4 persons:


25 gr butter.
1 small onion.
1 red chilli.
2 cloves of garlic.
50 gr sugar.
100 ml red wine vinegar.
1 kg ripe vine tomatoes or pomodori tomatoes.
1 slice white bread.
1 bunch fresh basil.
Salt and freshly ground black pepper to taste.

Method:

Peel and slice the onion lengthwise thinly.
Peel the cloves of garlic and grate.
Halve the chilli, remove the seeds and membranes and chop finely.
Wash the tomatoes and chop in eights.
Wash the basil and drain well in a colander.
Heat the butter in a large pan on a medium heat and fry the onions until soft and translucent. Do not color them.
Season with a pinch of salt.
Add the finely chopped chilli and grated garlic, fry for a further 2 - 3 minutes.
Add the vinegar and the suger, bring up to the boil and reduce until there is about a quarter left and syrupy.
Add the chopped tomatoes and bring back to the boil.
Cook the tomatoes for about 15 to 20 minutes until they have broken down.
Chop the basil coursely, stalks and all, and add to the soup.
Chop up the bread and add to the soup, bring it back to the boil.
Remove the pan from the heat and leave the soup to cool slightly.
Put the soup in a blender and blend until smooth.
Strain the soup through a fine sieve in to a clean pan.
Season to taste with salt and freshly ground black pepper.
Serve the soup in soup bowls and place a spoonful of pesto on top.
If you like, drizzle some extra virgin olive oil and some cream over the soup.
Don't put your mouth into motion, before your brain is in gear.
