French onion soup.

Soup, who doesn't like it. Here are some delicious soups which are simple to make.

French onion soup.

French onion soup.

Ingredients for 4 to 6 persons:


50 gr butter in cubes.
2 tbsp olive oil.
1 large clove of garlic, crushed with some seasalt.
½ tsp sugar.
1,5kg sweet onions in thin slices.
1 sprig of thyme.
2 bayleaf.
100ml medium dry sherry.
1 tbsp soy sauce.
1,5l beefstock from cubes.
1 baguette.
1 clove of garlic.
Olive oil.
200gr grated gruyère cheese.

Method:

Heat the butter over a medium heat and fry half of the onions and the garlic for about 7 minutes.
Add the remaining onion and mix well to combine.
Turn up the heat a bit and cook the onions for about 12 minutes till all the moisture has evaporated and the onions starting to brown.
Turn down the heat, add the thyme and bayleaf.
Leave to cook on a low heat with the lid on, about 30 to 35 minutes, stirring every now and than to stop the onions from burning.
Add the sherry and let the alcohol cook off.
Add the joy sauce and the beefstock and leave to simmer for about 15 minutes, season to taste with salt and freshly ground black pepper.
Meanwhile, slice the baguette in 1 cm slices and toast one side under a hot grill till golden.
Turn the slices over, brush with some olive oil and grill untill lightly browned.
Rub the slices with the clove of garlic, sprinkle with a little seasalt and top with the grated cheese.
Devide the soup over 4 to 6 soup bowls, place the bowls on to a baking tray and top the soup with 2 or 3 slices of baguette.
Place the remaining slices on the baking tray and top the grated cheese with a little freshly ground black pepper.
Place the baking tray in the oven till the cheese is golden and bubbling, serve at once.
Don't put your mouth into motion, before your brain is in gear.
