Steak à la café de Paris

Ingredients:


4 pieces of tenderloin.
30 gr butter.
1/2 tbsp olive oil.
1 shallot.
1 clove of garlic.
125 ml dry white wine.
125 ml water.
2 tbsp dried chervil.
1 tbsp dried taragon.
1 tbsp dried parsley.
2 tsp hot mustard. (Colman's)
7 ml lemon juice.
1 tbsp sugar.
1 tbsp cognac.
1 pinch dried oregano.
1 packet white sauce. (Colman's)
Freshly ground black pepper and salt to taste.

Method:

Peel and chop the shallot very fine.
Heat the butter and the oil in a frying pan and fry the steaks to your linking, season with salt and pepper.
Remove from the pan and keep warm, loosely covered with aluminium foil.
Fry the shallot in the pan on medium heat, together with the crushed garlic until soft.
Add the water and the white wine, stir well to scrape up all the goodness that's in the pan.
Add the chervil, the taragon, the parsley, the mustard, the lemon juice, the oregano and the sugar to the pan.
Add the white sauce from the packet and whisk until the sauce is smooth, bringing the sauce up to the boil.
Season the sauce with freshly ground black pepper and leave to simmer for about 2 minutes.
Stir in the cognac at the very last minute.
Serve the steaks with the sauce, roasted potatoes and green beans.
Don't put your mouth into motion, before your brain is in gear.
